These are salts of oxalic acid, which are common in plants such as rhubarb, sorrel, spinach, tea leaves. Oxalates are found in leafy plants at about 0.2–1.3%, and in tea – about 2%. When oxalates enter the body, they combine into non-absorbable compounds that are excreted through the kidneys. Oxalates, constantly consumed with food, can promote the formation of kidney stones.
